TOMATO TART 
4 tomatoes, sliced
1 unbaked (9-inch) pie shell
8 oz mozzarella cheese, shredded
2 tbsp dried or chopped fresh basil
1/4 c olive oil

Arrange the tomatoes slices evenly in the pie shell. Cover with the cheese. Sprinkle with basil. Drizzle with olive oil.

Bake at 400°F for 30 minutes.
