COCONUT CREAM PIE 
2 c. milk
1 tbsp. starch
1/2 c. sugar
1/4 tsp. salt
2 egg yolks, slightly beaten
1 tsp. vanilla
1 baked pie shell
1 can coconut - put half with custard, rest on top of meringue

In a double boiler, add milk with dry ingredients. Add a small amount of mixture with slightly beaten egg then add all to mixture. Add vanilla and coconut last. When mixture is thickened set aside to cool and make meringue. Then put in baked shell. Add meringue and put coconut on top. Heat in oven 425 degrees until coconut is brown.

MERINGUE:

Beat 2 egg whites with 4 level tablespoons of sugar until stiff.
