SAUSAGE AND PEPPERS ITALIANO | |
1 lb. Italian sausage, cut into chunks 2 tbsp. water 2 lg. green peppers, cut into 3/4 inch wide strips 1 med. onion, sliced and separated into rings 2 cloves garlic, minced 1 can (11 oz.) Zesty tomato soup 1 c. water 1 tsp. vinegar 1 (family size) Boil-in-Bag Rice 1. In covered skillet over medium heat, cook sausage in 2 tablespoons water 5 minutes. Uncover; cook until sausage is browned on all sides. 2. Add green peppers, onion and garlic to sausage in skillet. Cook until peppers are tender-crisp, stirring frequently. Spoon off fat. 3. Stir in soup, 1 cup water and vinegar; reduce heat to low. Cover; simmer 10 minutes. 4. Meanwhile, cook rice according to package directions. Serve sausage and peppers over hot cooked rice. Makes 4 servings. |
