PORK CHOPS PARMIGIANA | |
6 center cut pork chops 15 oz. can tomato sauce 1 1/2 c. water 3/4 c. uncooked rice 6 thin slices Mozzarella cheese 2 tbsp. grated Parmesan cheese 1 tbsp. oil Salt and pepper 1/2 to 1 tsp. oregano 1/4 c. chopped green peppers Brown chops in oil. Salt and pepper, if desired. Drain off fat. Remove chops. Add 1 1/2 cup tomato sauce, water, oregano, rice and green pepper to skillet. Cover. Simmer 25 to 30 minutes. The last 10 minutes, arrange Mozzarella cheese, rest of sauce and Parmesan on chops. Serves 4 to 6. |
