FRIED CORN BREAD CAKES 
1 c. white cornmeal
1/2 c. self-rising flour
1 tsp. salt

Sift cornmeal, flour and salt into a bowl then stir in enough boiling water to make the mixture the consistency of dough. Take a lump of dough about the size of an egg, roll it in your hand and flatten with wet hands. Repeat until all of the dough mixture has been used. Fry these to a golden brown on both sides, in medium hot grease or shortening. Shortenings -- add more if needed.
