ITALIAN CHICKEN 
1 bell pepper, chopped
Several stalks of celery, chopped
2 sm. cloves garlic, minced
2 tbsp. Wesson oil
3 cans tomato sauce
5 lb. hen - pull meat from bone and chop
1 tbsp. Tabasco sauce
2 pkgs. noodles
1 sm. can sweet peas
1 sm. jar mushrooms (optional)
1 tbsp. Worcestershire sauce

Cook hen in boiling water until tender, save enough stock to cook noodles. Cook the first three ingredients in Wesson oil until tender, but not brown; add tomato sauce, Tabasco and Worcestershire sauces and salt and pepper to taste. Cook noodles, but do not over cook. Add chicken, peas and mushrooms. Pour sauce over top. Sprinkle Parmesan cheese over top if desired.
