APPLE AND OAT BRAN MUFFINS 
1 1/4 c. whole wheat flour
1 c. oat bran
1/3 c. packed brown sugar
2 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/4 tsp. cinnamon
1 c. skim milk
2 egg whites
2 tbsp. cooking oil
3/4 c. shredded, peeled apple
Non-stick cooking spray

In a medium bowl stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon. Set aside.

In a small bowl combine milk, egg whites and oil. Add to dry ingredients; stir just until moistened. Stir in shredded apple.

To bake, spray muffin cups with non-stick spray coating. Spoon about 1/4 cup butter into each muffin cup.

Bake at 375 degrees for 18-20 minutes or until toothpick comes out clean. Makes about 12 muffins.

(Store batter, tightly covered, in refrigerator for up to 5 days, if desired.)
