CHEESY WALNUT CHICKEN 
4 chicken breasts, skinless & chopped to bite-size
3 c. chicken broth
1/3 c. celery
1/3 c. onion
1/4 c. chopped parsley
2 tsp. dried rosemary
2 tbsp. lime juice
1/2 c. olive oil
2 cloves garlic, minced
1 c. walnuts, chopped
4 oz. bleu cheese, crumbled
8 oz. bow-tie noodles, cooked, drained
1/3 c. Parmesan cheese
Cherry tomatoes

In a large frying pan place chicken, broth, onion, celery. Cook on medium heat about 20 minutes. In a large bowl combine chicken, rosemary, parsley, lime juice, oil, garlic, walnuts, bleu cheese. Let stand 15 minutes. Mix with noodles, sprinkle with Parmesan cheese. Garnish with tomatoes. 4 servings.
