FRENCH FRIED CAULIFLOWER 
1 head cauliflower
2 eggs, slightly beaten
1 c. dry bread or cracker crumbs
Shortening for frying

Separate cauliflower into flowerets; wash thoroughly and dry between paper towels. Dip cauliflower into egg; roll in crumbs. Heat shortening in Calrod Golden Fryer to 375 degrees. Fry cauliflower in hot shortening 1 to 2 minutes or until golden brown. Drain on absorbent paper. Serve hot. Yields 6 to 8 servings.
