RANCH DRESSING 
1/2 c. yogurt cheese
1 1/2 tsp. powdered Ranch dressing mix
1 tsp. olive oil (optional)
1 tsp. red wine vinegar
Skim milk to thin as desired

Mix and refrigerate. Ingredients may be altered in quantity according to taste.

To make yogurt cheese: Place a large sieve in a bowl so that it rests on the lip of the bowl. Line sieve with 2-3 layers of cheesecloth. Pour nonfat plain yogurt into sieve. Allow to drain in refrigerator for 24-48 hours. Dispose of liquid that has drained out of yogurt. Use "cheese" as you would cream cheese.
