RED VELVET CAKE 
2 1/2 c. plain flour
1 c. buttermilk
2 eggs
1 tsp. vinegar
1 tsp. vanilla
1 bottle red food coloring
1 1/2 c. sugar
1 1/2 c. Wesson oil
1 tsp. cocoa
1 tsp. salt
1 tsp. baking soda

Mix all ingredients together and bake in three, nine-inch round layer pans, spray pans, for 20 to 25 minutes at 350 degrees. Test with toothpick. Cool in wire racks for 10 minutes, then remove from pans and cool.

ICING:

8 oz. pkg. cream cheese
1 box confection sugar
1 c. nuts
1 stick butter
1 tsp. vanilla

Combine butter, cheese, vanilla, and sugar in bowl. Beat until fluffy. Add nuts. Fill and top cake with icing. Can save some nuts to top cake with.
