SHRIMP CREOLE 
2 lb. sm. shrimp
1 c. celery, chopped
1 c. onion, chopped
1/4 c. diced green pepper
1/4 c. vegetable oil
3 cloves garlic, minced
1 tsp. sugar
1 tsp. chili powder
2 tbsp. flour, mixed with 1/2 c. water
1 can tomatoes
1 tbsp. vinegar

Cook onion, celery and green pepper in oil until tender. Mix garlic, sugar, chili powder and flour that has been mixed with water; add to cooked onion, celery and green pepper. Cover and simmer on low heat for 15 minutes, then add tomatoes, vinegar and shrimp. Simmer for an additional 15 minutes or until shrimp are done. Excellent served over bed of rice.
