SHRIMP CREOLE - MICROWAVE! 
1/2 c. chopped celery
1/2 c. chopped green pepper
1/2 c. chopped onion
2 tbsp. vegetable oil
2 cloves minced garlic
1 (16 oz.) can whole tomatoes, drained
1 (16 oz.) can tomato sauce
2 tsp. sugar
1 tsp. chili powder
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. cayenne (optional)
1 lb. fresh shrimp, uncooked, peeled and deveined (can use 1 lb. chicken breast meat, uncooked, cubed)

Combine celery, onion, peppers, oil and garlic in 2-quart casserole dish. Microwave on HIGH powder for 3-6 minutes, stirring 2 times. Add remaining ingredients except shrimp (or chicken). Stir and break up tomatoes. Microwave on HIGH power 5-8 minutes, stirring 1 time.

Stir in shrimp (or chicken); microwave on MEDIUM for 9-12 minutes (until shrimp are firm and opaque) - stir every 2 minutes. Let stand 5 minutes. Serve over white rice. Yield 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
