ENCHILADA CASSEROLE 
2 lbs. ground chuck
1 sm. onion, chopped
Salt, pepper & garlic powder to taste
1 sm. can mild green chilies, chopped
2 cans cream of mushroom soup
2 cans mild enchilada sauce
Nacho cheese tortilla chips
Mild cheddar cheese, grated

Brown meat, onion, and seasonings. Drain. Heat soup with just enough water to rinse cans. Layer chips, meat, enchilada sauce, green chilies, and soup. Top with grated mild cheddar cheese. Bake uncovered at 350 degrees for about 15 minutes or until cheese and sauce bubbles up through cheese.
