1 pkg. lemon or yellow cake mix
1/2 c. cooking oil or shortening
1/2 c. sugar
3 tbsp. Real Lemon juice
2 eggs
2 tbsp. flour
1 tbsp. lemon flavoring
1/4 tsp. baking powder

Mix all ingredients and drop by spoonfuls on cookie sheet. Bake at 350 degrees until brown around the edges, about 9 minutes. Cookies should be soft in the middle. If not they were cooked too long. Leave cookies on pan for 10 minutes before taking them off.

Spray cookie sheet with Pam before spooning cookies on sheet. Yields: about 100 cookies. This would be great for Vacation Bible School.
