WHOLE WHEAT BANANA NUT MUFFINS 
2 1/2 cups ripe bananas
2 eggs
3/4 cup brown sugar
1/2 cup (1 stick) butter, melted
1 tsp. vanilla
1 cup whole wheat flour
1 1/4 cups all-purpose flour
2 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1 cup walnuts, roasted & chopped

Preheat oven to 350°F.

Puree bananas. Add eggs, sugar, butter and vanilla; mix well. In large bowl combine remaining ingredients and add banana mixture. Stir in nuts. Spoon into buttered muffin pans.

Bake at 350°F for 25-30 minutes.

Makes about 12 muffins.

Very moist! I used more whole wheat flour than white, added 1/4 cup canola oil and added 1/2 cup more walnuts coarsely chopped. Baked in muffin liners. Perfect!

Have four kids from 1 to 14 and they all loved these. I was short a half cup of bananas so I substituted 1/2 cup of applesauce. Using cup cake liners and filling them with 1/4 cup of batter I was able to make 21 muffins. Really moist and yummy. Will make again for sure!

Delicious muffins! I don't know how one reviewer said they were dry and dense. Mine came out incredibly light and moist. I beat the banana with an electric mixer which I think added to the moistness. When making muffins make sure you fluff the flour with a fork to separate it and then spoon it into the measuring cups and level with a knife. Never just scoop out the flour with your measuring cup. Also mix the batter JUST until moist. Over-mixing is what will make them dense! So good I will be making these again and again. Next time I think I'll try them with all whole wheat flour to see what happens.

Tasty! I added some vanilla flavored yogurt to fill in for lack of bananas about 3/4 cups. I also added some mini chocolate chips. Made them into mini-muffins for a road trip cooked for 18 minutes, came out light and fluffy for a whole wheat muffin.
