EASY BROCCOLI SOUFFLE 
2 (10 oz.) pkg. frozen chopped broccoli
1 c. Bisquick baking mix
1 c. milk
2 eggs
1/2 tsp. salt
1 c. shredded cheddar cheese (4 oz.)

Heat oven to 325 degrees. Butter 5 1/2 cup souffle dish or 1 1/2 quart casserole. Cook broccoli as directed on package; drain. Beat baking mix, milk, eggs and salt with hand beater until smooth. Stir in broccoli and cheese. Pour into souffle dish. Bake until knife inserted halfway between edge and center comes out clean, about 1 hour. Serve immediately. 6 servings.

EASY CORN SOUFFLE: Substitute 2 (10 ounces) packages frozen corn for the broccoli.

EASY SPINACH SOUFFLE: Substitute 2 (10 ounce) packages frozen chopped spinach for the broccoli.
