CHEESE STUFFED MUSHROOMS 
20 lg. mushrooms (chop stems)
1/4 c. bread crumbs
2 tbsp. chopped parsley
2 garlic cloves
1/2 onion, chopped
2 eggs, beaten
1/2 c. Ricotta cheese
1/4 tsp. cumin
1/4 c. olive oil
1/4 c. Parmesan cheese

Soak bread crumbs in water, squeeze dry. Mix all other ingredients except oil and cheese. Stuff the caps with mixture. Place on cookie sheet. Sprinkle with oil and cheese. Bake at 400 degrees for 20 minutes.
