CHEESE STUFFED MUSHROOMS 
3/4 lb. fresh mushrooms
3 tsp. oil
1 tbsp. minced onion
1/4 c. finely chopped hard salami
1/4 c. smoked cheese spread
1 tbsp. catsup
Bread crumbs

Clean mushrooms and remove stems. Chop enough stems to make 1/3 cup. Brush mushroom caps lightly with 2 teaspoons of the oil. Heat remaining oil in skillet; add onions and mushroom stems; saute until golden. Stir in remaining ingredients except bread crumbs.

Spoon mixture in mushroom caps and sprinkle with bread crumbs. Bake in 425 degree oven for 6-8 minutes. May be prepared ahead of time, refrigerate and baked before serving.
