2 corn tortillas 3 egg whites SAUCE: 2 lg. onions 1 green bell pepper 1 (14 oz.) can tomatoes 1 (14 oz.) can chicken broth GARNISH: Fresh cilantro Chopped green onion 2 thin slices avocado 2 slices low fat, low cholesterol cheese Place 1 to 2 cooked tortillas on a plate. Scramble egg whites and place on top of tortillas. Add 1/2 cup of sauce and garnish with fresh cilantro, chopped green onion, avocado, and low fat cheese. To prepare sauce: In a frying pan, saute onions and green pepper in a little water until soft. Add tomatoes and broth. Boil, uncovered, stirring to prevent sticking, until sauce is reduced to about 2 1/2 cups. |
