FISH WITH ONIONS AND TOMATOES 
2 med. onions, sliced
2 tbsp. butter
1 tbsp. fresh lemon juice
1 1/2 lbs. fillet of sole, cod, or flounder
1 tsp. salt
4 med. tomatoes, sliced 1/4 inch thick
Pepper
1/4 c. white wine
3 tbsp. chopped parsley or dill

In heavy saucepan or electric skillet, saute onions in butter until soft and golden. Wipe fish with damp cloth and cut into serving pieces. Sprinkle with lemon and salt; arrange on top of onions. Cover with tomato slices. Sprinkle with pepper and pour wine over top. Cover and simmer 10-15 minutes. Add parsley. Serves 4-6.
