TACO SALAD 
1 - 1 1/2 lbs. ground beef
1 pkg. dry taco sauce mix
1 can kidney beans
1 head lettuce
1 onion
4 oz. grated Cheddar cheese
1 (8 oz.) bottle Thousand Island or Catalina dressing
4 tomatoes
4 oz. taco or corn chips
1 green pepper (optional)
Taco sauce (good when served with salad)

Brown 1 - 1 1/2 lbs. ground beef; drain. Add 1 package dry taco sauce mix. Add 1 can drained kidney beans. Shred 1 head lettuce, chop one onion and toss with 4 oz. grated cheese. Add one 8 oz. bottle of Thousand Island or Catalina dressing and 4 tomatoes, cut up. Top with a bag (or 4 oz.) taco or corn chips, crushed.

Part of this may be done ahead and kept in refrigerator. Add dressing and ground beef just before serving and put chips on last to avoid sogginess.
