ZUCCHINI SQUARES 
4 eggs
2 c. sugar
1 1/2 c. oil
2 1/2 c. flour
3 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 1/2 c. coconut
1 c. walnuts, chopped
3 c. zucchini, grated

FROSTING:

8 oz. softened cream cheese
1 cube butter
2 c. powdered sugar
2 tsp. vanilla

In large bowl, beat together eggs and sugar. Add oil. Set aside. In another large bowl, sift together flour, baking soda, cinnamon and salt. Combine flour mixture with egg mixture. Add coconut, walnuts and zucchini. Turn into square baking pan. Bake at 350 degrees for 25-30 minutes. To frost, blend cream cheese and butter well. Mix in powdered sugar and vanilla. Spread over cooled cake.
