1 lb. eye of round steak, sliced thin 2 c. seasoned bread crumbs 1 med. onion, chopped fine 1/2 c. Romano cheese Butter and olive oil Chopped parsley 4 bay leaves Simmer onions in small amount of oil, until slightly brown. Remove from heat. Add bread crumbs, stirring constantly. Add parsley and cheese. Place about a teaspoon of bread crumb mixture on each slice of meat. Roll up and place open end down in a baking dish with a little olive oil on bottom of it. Place meat roll ups close together. Sprinkle with remaining bread crumbs. Place a dab of butter here and there over the top. Add bay leaves here and there. Bake at 400 degrees until brown, then turn down to 300 degrees and bake another 45 minutes. |
