ITALIAN CREAM CAKE 
1 stick butter
1/2 c. Crisco
2 c. sugar
5 egg yolks
1 tsp. baking soda
5 egg whites, beaten stiff
2 c. flour
1 c. buttermilk
1 tsp. vanilla
1 c. chopped nuts
1 c. coconut

Cream butter, Crisco and sugar. Add egg yolks. Sift flour and add soda. Add to first mixture with buttermilk, flour first and last. Add vanilla. Stir in nuts and coconut; fold in egg whites which have been beaten stiff. Bake in 3 layer pans (8 or 9 inch) for 20 minutes at 350 degrees.

ICING:

8 oz. cream cheese, softened
1/2 c. Crisco or butter
3 c. powdered sugar
1 tsp. vanilla
1 tsp. milk, if needed
Chopped nuts

Combine softened cream cheese with Crisco, sugar and vanilla (if too thick, add 1 teaspoon milk). Beat frosting until fluffy. Sprinkle top with chopped nuts, if desired.
