LEMON BARS 
2 c. flour
1/2 c. confectioners' sugar
2 sticks cold unsalted butter

CUSTARD (LEMON FILLING) :

4 eggs
2 c. sugar
1/3 c. fresh lemon juice
2 drops lemon extract
1/4 c. flour
1/2 tsp. baking powder

1. Mix together on the low speed with a mixer until crumbly. Place mixture in 9 x 13 inch (lightly greased) pan. Pat gently and press to make crust. Place in pan in preheated oven at 350 degrees for 25 minutes. (Check at 20 minutes, crust should be light brown.) Remove from oven.

2. Mix custard while crust is baking. If it should sit while crust is baking mix again before pouring over crust. Bake at 350 degrees for 20 minutes.
