BAKED TUNA PATTIES 
1/4 c. finely chopped celery
6 tbsp. butter
3 tbsp. all-purpose flour
1/4 tsp. paprika
3/4 c. milk
1 (9 1/4 oz.) can tuna fish, drained
2 c. soft bread crumbs
2 tbsp. chopped green pepper
1 egg
2/3 c. finely crushed round cheese crackers (about 20)

SAUCE: In a saucepan, cook celery in 3 tablespoons butter until tender. Stir in flour, paprika and 1/4 teaspoon salt. Stir in milk. Cook and stir until thick and bubbly. Cool slightly. Flake tuna and mix into sauce with bread crumbs and onion. Form into 8 patties. Beat egg and 1 tablespoon water together. Dip patties into egg, then roll in cracker crumbs. Place in lightly greased 11" x 7" x 1 1/2" baking pan. Melt remaining butter and drizzle over patties. Bake at 350 degrees for 20 to 25 minutes or until golden brown. Serves 4.
