BAKED RICE PUDDING 
4 c. milk
1/2 tsp. salt
1/2 c. sugar
1/2 tsp. nutmeg
3 tbsp. rice
1/2 c. raisins

Preheat oven to 300 degrees. Put all ingredients in a buttered baking dish and stir to blend. Bake 3 1/2 hours, stir 3 times 1st hour so rice won't settle.

The little bit of rice to a quart of milk is correct. Long, slow baking gives the pudding a golden color and a thick, creamy texture.
