BUTTERMILK CAKE 
3 c. all-purpose flour
1/4 tsp. baking soda
1 c. butter
2 3/4 c. sugar
4 eggs
1 tsp. vanilla (or lemon rind)
1 c. buttermilk

Sift flour and soda together; cream butter and sugar until well blended. Add eggs, one at a time, beating well on high speed after each addition until light and fluffy. Using low speed, mix in lemon rind or add vanilla to buttermilk. Add dry ingredients alternately with milk to creamed mixture. Add flour in 3 parts and milk in two parts. Mix only until all flour is moistened. Pour into greased tube pan. Bake at 350 degrees for 1 hour and ten minutes.
