BUTTERMILK LOAF CAKE 
1 1/2 c. butter
3 c. sugar
6 eggs
1 1/2 tsp. vanilla extract
1 1/2 tsp. lemon juice
1 tbsp. grated lemon rind
4 1/2 c. sifted all-purpose flour
1 tsp. salt
3/4 tsp. baking powder
3/4 tsp. baking soda
1 1/2 c. buttermilk

Cream butter; gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in vanilla, lemon juice, and rind. Sift together dry ingredients. Add alternately with buttermilk to creamed mixture. Turn batter into 2 greased and floured 9 x 5 x 3 inch loaf pans. Bake at 350 degrees about 1 hour and 10 minutes or until done. Cool in pans 10 minutes; remove from pans and finish cooling on racks. Makes 2 loaves.
