ACINI PEPE SALAD 
4 oz. Renzoni Acini Pepe (1/2 box.)
1 c. mandarin oranges, cut in half
1 lg. can crushed pineapple
8 oz. Cool Whip
4 oz. miniature colored marshmallows
1 tbsp. cornstarch
1 egg, beaten
1/2 tsp. salt
1/2 c. sugar

Cook Acini Pepe. While cooking drain fruit, reserving 1 cup juice. To juice add 1 tablespoon cornstarch, 1 beaten egg, 1/2 teaspoon salt and 1/2 cup sugar. Bring this to a boil and cook until thick. Drain Acini Pepe and mix with fruit and juice mixture (mix while hot). Chill overnight. Before serving add Cool Whip and marshmallows. Makes a large salad. Great for picnics and pot lucks!!
