YUMMY BREAST OF CHICKEN | |
3 whole chicken breasts, boned, halved, skin removed 2 tbsp. flour 1/4 c. butter 1 (10 1/2 oz.) can condensed beef consomme, undiluted 1/2 c. dairy sour cream 1 tsp. salt 1/4 tsp. black pepper 1 tbsp. grated Parmesan cheese Sprinkle chicken pieces with flour and saute in butter until golden brown. Add consomme and simmer, covered, about 45 minutes. Stir in sour cream, salt and pepper and simmer 10 minutes longer. Remove chicken pieces to heatproof serving dish. Stir sauce in pan to mix well and strain over chicken. Sprinkle cheese over top and run under the broiler for a few minutes until golden brown. (If desired, refrigerate chicken overnight to improve flavor. Heat before serving.) |
