ZUCCHINI BREAD 
3 eggs, beaten
2 c. sugar
1 c. oil
3 tsp. vanilla

Add sugar, oil and vanilla to beaten eggs. Mix above with electric mixer. Peel and grate and stir in by hand 2 cups zucchini.

Sift together:

3 c. sifted flour
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1/4 tsp. baking powder

Add to batter, mixing by hand. Add 1/2 cup chopped nuts (optional).

Bake at 325 degrees for 1 hour (more or less depending on size of pans). Makes 2 loaves in glass or tin 5 1/4 x 9 1/4 inch bread pans or 3 loaves in disposable aluminum foil 3 1/2 x 8 inch pans.
