ZUCCHINI BREAD 
3 eggs
1 c. oil
2 tsp. cinnamon
1 1/2 c. sugar
1/2 c. nuts
2 c. zucchini, raw, peeled, grated
1/2 c. milk
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3/4 c. raisins (opt.)

Beat eggs until light and fluffy. Add oil, sugar, zucchini and vanilla. Add flour, salt, soda, baking powder and cinnamon. Mix well. Add nuts, milk and raisins. Bake in two greased bread pans at 325 degrees for 1 hour. Frost if desired.
