TASTY OAT BRAN MUFFINS 
2 1/4 c. oat bran cereal
1/4 c. chopped nuts (walnuts or pecans)
1/4 c. raisins, dates or currants
1 tbsp. baking powder
1 1/4 c. skim milk or evaporated milk
1/4 c. brown sugar or 1/4 c. honey
2 egg whites
2 tbsp. vegetable oil

In a large bowl, combine oat bran, nuts, raisins and baking powder. Stir in brown sugar. Mix milk, egg whites, and oil together and blend in with oat bran mixture. Fill muffin cups (I prefer to line them with paper baking cups). Bake 15 to 17 minutes in 425 degree oven. Test for doneness with a toothpick. Makes 12 muffins.

If not eaten within three days, keep them in refrigerator since they contain no preservatives. (No cholesterol.)
