POLYNESIAN CHICKEN 
1 (8 oz.) bottle Russian salad dressing
1 env. onion soup mix
1 (10 oz.) jar apricot preserves (jam)
2 broiler fryer chickens, cut up (or breasts only)

Combine salad dressing, onion soup and preserves. Place chicken in single layer, skin side up, in a shallow pan. Pour half of mixture over top and spread it around. Bake 1 1/2 hours at 350 degree oven, basting occasionally with other half. Serve over plain rice or rice pilaf. This is good served with fruit salad and rolls.
