AUNT HELEN'S COCONUT CREAM PIE 
2/3 c. sugar
3 tbsp. cornstarch
1/2 tsp. salt

Mix above in saucepan.

3 c. milk

Stir in milk gradually.

1. Cook over medium heat, stir until thick, boil one minute. Remove from heat.

2. Stir 1/2 of mixture into 3 beaten egg yolks.

3. Then blend into hot mixture. Boil 1 minute. Remove from heat.

4. Blend in:

1 tsp. butter
1 1/2 tsp. vanilla
3/4 c. coconut

5. Pour into baked pie shell and chill - then top with whipped cream.
