AUNT POLLY'S COCONUT CREAM PIE 
2/3 c. sugar
3 tbsp. cornstarch
2 c. milk (1 lg. can evaporated milk - rest whole milk)
1/2 tsp. salt
1 1/2 tsp. vanilla
3 egg yolks
1 tbsp. butter
1 can angel flake coconut

Mix sugar and cornstarch well. Add milk, eggs, salt, and butter. Mix well. Cook over low heat, stirring constantly until thick. Add coconut and vanilla. Pour into 9 inch baked pie crust. Top with meringue or Cool Whip.
