JAMBALAYA 
1 sm. onion, chopped
1 green pepper, chopped
1 rib celery, chopped
2 cloves garlic, crushed
3/4 lb. chicken, cubed
2 bay leaves
1 (28 oz.) can tomatoes
1 c. chicken stock
2 tbsp. Worcestershire sauce
1/2 lb. smoked sausage, sliced
1/2 lb. peeled shrimp
1 c. rice

Heat a small amount of oil in a large pot. Cook vegetables in hot oil for 5 minutes. Add chicken and bay leaves, cook for 10-15 minutes. Add remaining ingredients except rice and mix thoroughly. When mixture returns to a boil, add the rice and cook for 20-30 minutes longer or until rice is done. Add salt, pepper and hot sauce to taste.
