JAMBALAYA 
1/2 c. bacon grease
3/4 c. flour
5 cloves garlic, chopped
2 lg. onions, chopped
2 stalks celery, chopped
1/2 c. parsley, chopped
1 lg. green pepper, chopped
1 c. canned tomatoes, crushed
2 pints water
1 1/2 c. beef juice
1 whole bay leaf
1/2 tsp. oregano
1 tsp. red pepper, ground
1/2 tsp. salt
1 c. ham, cubed
1 c. shrimp (popcorn)

You might want to start with less and add to taste.

Blend flour and grease until brown. Add beef juice, water, all vegetables and seasoning. Cook well together. Add ham and shrimp just before serving over bed of rice. Serves 6 to 8.
