Use any zucchini bread recipe. Take a nonstick cooking spray (like Mazola) and spray the inside of wide mouthed pint jars. Fill the jars 2/3 full of zucchini bread recipe. Leave jars uncovered. Bake at specified temperature that the bread should be baked at. Bread is done when the tops bounce back. If the bread cooks up too high for the lid, cut it down. While the bread is hot, have HOT lids and HOT rims ready. Seal breads immediately and let cool. When opened, the bread should slide out with a tap. A great, moist tea-time snack!
