LIMA BEAN-BEEF BALL CASSEROLE 
2 (10 oz.) pkgs. frozen green baby lima beans
2-3 slices bread
1/4 c. milk
1 1/2 tsp. salt
1/2 tsp. pepper
1 clove garlic, minced
1 egg, beaten
1 lb. lean ground beef
1 c. sour cream
4 tbsp. butter

Cook lima beans according to package directions. Drain and reserve liquid to use as water. While beans cook, soak bread in milk.

In large bowl, mix 1 teaspoon salt, 1/4 teaspoon pepper, egg and minced garlic. Add soaked bread and ground beef. Mix well but lightly. Roll into walnut size balls. Brown on all sides in 2 tablespoons butter in skillet. Transfer to bottom of 2 1/2 quart casserole. Pour reserved bean liquid into skillet. Stir and then pour over meatballs. Season beans with remaining salt, pepper and butter and add to casserole. Bake, covered 30 minutes in 350 degree oven. Spoon sour cream over top and bake 5 minutes. Garnish with paprika and parsley. Serves 4 to 6.
