LENTIL SOUP 
1 lb. ham hock or bone
2 carrots
2 stalks celery
1 onion, chopped
1 pkg. lentils
10 c. water
2 tbsp. tomato paste
3 tbsp. Parmesan cheese
Salt & pepper
1 garlic clove
1 bay leaf

Puree carrots, celery and onion in blender. Saute garlic in small amount of oil. Add vegetables, water, lentils, tomato paste, cheese, salt, pepper, bay leaf and ham. Simmer 2 hours.
