PATRICE'S CURRIED TURKEY SALAD 
1 1/2 lbs. cooked turkey breast, cut into bite-sized pieces
1/2 c. raisins
1/2 c. coarsely chopped walnuts
1/2 c. sliced celery
1-2 tbsp. curry powder
3 lg. Granny Smith or Delicious apples
1/2 c. mayonnaise (or half yogurt and half lowfat mayonnaise)

Core and dice the apples. Combine all ingredients in a large bowl the night before serving. The ingredients can be adjusted to suite individual tastes. Serve chilled, on a lettuce leaf or in a croissant. Serves 3-4.
