TURKEY CURRY 
2 c. diced, roasted turkey
1/2 stick (1/4 c.) butter
1/4 c. chopped onion
1/4 c. flour
1 tsp. salt
1/2 tsp. ground ginger
1 tbsp. curry powder
2 c. milk
1/4 c. chopped celery
1 c. chopped apple
Cooked rice (optional)
1/2 c. each toasted almonds, toasted coconut and crisp crumbled bacon (optional)

Melt butter in saucepan. Add onion and cook 5 minutes. Blend in flour and seasonings. Remove from heat. Gradually add milk. Stirring constantly, cook until mixture thickens. Add turkey, celery and apple. Cook 5 minutes. Serve over rice with toasted almonds, coconut and bacon sprinkled on top. Yield: 6 servings.
