POUND CAKE 
3/4 c. all-purpose flour
1 1/2 tsp. baking powder
1/4 c. unsalted butter
1/4 c. sugar
2 eggs
2 tsp. vanilla

Spray 7 3/8 x 3 5/8 x 2 1/4 inch loaf pan with nonstick cooking spray. Preheat oven to 350 degrees. In mixing bowl, using electric mixer, cream butter; gradually add sugar and beat until light and fluffy. Beat in eggs, one at a time, beating after each addition until thoroughly combined; beat in vanilla, add sifted ingredients. Beat just until blended. Pour in sprayed loaf pan. Bake 20 to 30 minutes. Serves 8 slices. Exchange - 1/2 bread, 1 1/2 fat exchange, 50 optional.

Top with strawberries and sugar-free ice cream and add 1 fruit exchange, 1/2 milk exchange and increase optional calories to 60.
