ZUCCHINI CASSEROLE 
6 c. grated zucchini
1/4 c. diced onion
1 c. shredded carrots
1 c. sour cream
1/2 c. butter (melted)
1 can cream of chicken soup
2 1/2 c. herb flavored stuffing cubes

Cook zucchini and onion together in salt water (about 5 minutes). Add carrots, sour cream and cream of chicken soup.

Mix together stuffing and butter. Spread half on bottom of baking dish. Add vegetable mixture and top with the other half of the stuffing. Bake 350 degrees for 30 minutes.
