TORTELLINI PRIMAVERA 
1/2 c. olive oil
1/4 c. chopped onion
12 oz. cheese tortellini, cooked & drained
1 tsp. crumbled dried thyme
1 (16 oz.) pkg. mixed frozen vegetables
1 lg. red bell pepper
8 cherry tomatoes, halved
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. black pepper
Broccoli, carrots, cauliflower

Heat oil in a large skillet over medium heat. Cut red pepper into thin strips and put in skillet with onions, garlic, thyme, salt and pepper. Cook 2 minutes or until onions are translucent. Add vegetables, cook about 3 minutes until heated through. Mix in tortellini. Serves 4.
