NO FAT CHANUKAH YAM BARS 
1/2 c. whole wheat pastry flour
1/2 c. "old fashioned" rolled oats
1 tsp. low sodium baking powder (e.g. Featherweight Brand)
1/2 tsp. pumpkin pie spice
1 tsp. ground ginger
1 1/2 tsp. grated orange rind
1 1/2 c. boiled, mashed yams
1/3 c. dates, chopped, dusted with 1 tbsp. flour
2 egg whites, stiffly beaten

Combine flour, oats, baking powder, ginger and pumpkin pie spice in a small bowl. In a large mixing bowl combine mashed yams and orange rind. Add dry ingredients and mix. Add dates and fold in egg whites.

Put into a 9 x 9 inch nonstick baking pan and spread evenly. Bake at 350 degrees for 30-35 minutes, or until brown. Cool and cut into bars. Makes 24 bars. Each bar contains approximately 42 calories. This is a non-fat, no sugar, oil, salt and non-cholesterol treat recipe!
