NEW ORLEANS PRALINES 
1 1/2 c. sugar
1/2 c. cream
1 tsp. butter
1/2 tsp. vanilla
2 c. chopped pecans

Boil the sugar and cream together until it forms a firm ball when tried in cold water. Add butter and vanilla and remove from fire; cool and beat until creamy. Add the broken pecans and stir well. Drop by tablespoons onto buttered paper and allow to harden.

This is the same pralines my family have enjoyed for over 20 years. But do not make on a rainy or humid day as they will not harden.
